Craft Georgia
Craft Georgia is the New York home of Craft Food — the Georgian street-food brand also known as Craft Shawarma (კრაფტ შაურმა). Back home, Craft Food runs seven locations across Georgia's three largest cities — Tbilisi, Batumi, and Kutaisi — and has grown into a holding company that brings together several fast-food concepts: the Craft Food restaurants, the Craft Grill beer pub, and its Italian kitchen, Craft Pizza.
Back home, the idea was simple: everything in one space. Shawarma is the hero, wrapped in our unmistakable black lavash, alongside burgers, salads, and dedicated vegetarian and fasting (samarkhvo) menus. What set it apart was the craft — fresh ingredients, made to order, and four signature sauces: smoked ajika, cheddar, sour cream & sweet-spicy, and spicy Asian.
Now that same kitchen is on Brighton Beach Ave.

What “craft” means
Craft means made by hand. It isn't a label we borrowed — it's how every wrap, every sauce, every order gets built. Nothing sits frozen. Nothing comes pre-packed. You order, and it's made in front of you.

Why we started
We opened our first counter with one stubborn belief: street food doesn't have to be an afterthought. A shawarma can be built from real, never-frozen ingredients and still land in minutes. Our black lavash — baked dark over charcoal — is part of that idea: a lighter, unmistakable wrap you won't find anywhere else on Brighton Beach.
Fast never had to mean careless. Not when it's made with craft.
